Raviolis (Wantan) with crème brûlée and mango chutney


for 4 covers:

  • 3 dl of cream 
  • 2 dl of milk
  • 30 grs of sugar
  • 4 egg yolks
  • Raviolis (wantan)
  • Didden mango chutney 
  • Brown cassonade sugar
  •  A vanilla-pod
  • One egg


  • Heat the milk and the cream with the vanilla
  • Make a ruban  with the egg yolks and the sugar (blanch the eggs)
  • Mix the ruban with the milk and the cream 
  • Bake on a baking sheet for 30 minutes at 120°C

How to prepare the raviolis

  • Put the cream and the chutney inside the raviolis, fold the raviolis into a triangle shape and then cut them into a half-moon shape using a cookie cutter
  • Cook them in water for 3 minutes (simmering water) 
  • Next, scorch them with the brown sugar, just like a crème brûlée
