Ingredients
- 3 eggs
- Butter (90 g)
- Wheat flour (2 tbsp)
- Cornstarch (1 tbsp)
- Dark chocolate (150 g)
- Liquid cream (3 tbsp)
- Sugar
- Your favorite confits! Example of the recipe:
Preparation
- Open the eggs
- Add sugar
- Add 2 tbsp of wheat flour
- Add 1 tbsp of cornstarch
- Mix
- In the bain bain marie :
- Add 150 g of dark chocolate
- Add 90 g of butter
- Add 3 tbsp of liquid cream
- Melt over low heat
- Add to the first preparation and mix
- Fill the moulds
- Create ice cubes of Confits with 1 tsp of your favorite confits, for example:
- Black Cherries Confits
- Cooked Cranberries
- Raspberry Confit with Litchis
- Fig Confit
- or even Raspberry Dressing
- Freeze for at least 1 hour
- Put 1 confit ice cube in each fondant
- Cook in the oven at 200 °C for 6-7 minutes
